Rice Pudding



Grandma wanted to put this on

1/2 cup calrose or long grain rice
2/3 cup sugar
4 cup milk
3 eggs
1 cup milk
1/4 cup sugar
2 tsp. vanilla
1/2 tsp. salt
Nutmeg--optional

Directions:
In heavy saucepan combine rice, 2/3 cup sugar, 4 cups milk, 1/2
tsp. salt and cook covered (simmering) for 45 minutes or until rice
is cooked. Beat eggs with 1 cup milk, 1/4 cup sugar and canilla.
Temper hot liquid to egg mixture-- Add egg mixture to rice
mixture. Bring to a boil--put in bowl-- cover surface with plastic
wrap. Refrigeraite untill cool. Stir and serve with nutmeg or
desired topping.
