Vegetable Cheese Soup


From the First Red Bradley Family Cookbook

Ingredients:
1 cup grated carrots
1 cup chopped celery
1 cup chopped onion
1 cup chopped green pepper
4 cups milk
8 cups chicken broth
6 cups grated sharp cheese
10 tablespoons butter
8 tablespoons flour
salt and pepper

Directions:
Saute vegetables in butter. Stir in flour, add broth. 
Simmer. Add milk and cheese and heat through but do
not boil.
