Lisa Stephenson Recipe
1 small onion chopped 1/2 bell pepper chopped 4 oz. white mushrooms chopped 1 medium carrot peeled and shredded 1 or 2 cloves garlic chopped 1/4 cup seasoned dried bread crumbs 2 tablespoons Parmesan cheese 1 large egg 1 teaspoon salt 1/8 teaspoon black pepper 1 1/2 lbs. ground chicken or turkey Saute onion in a bit of olive oil, then add pepper, mushrooms, carrot and garlic. Cook until the liquid reduces quite a bit and then add the tomatoes. Cook a few more minutes and take off the heat. Assemble the other ingredients in a bowl and mix with with a fork or your hands. After the vegetables have cooled add them to the meat mixture. Form into patties and chill them in the fridge ( I sometimes skip this step if time doesn't permit). You can grill on the barbeque or in a pan. They cook faster than beef. |
