Chocolate, Chocolate Chip (or M&M) Cookies

 1 cup butter

1 1/2 cups sugar

2 eggs

2 tsp vanilla

2 c all purpose flour

2/3 cup cocoa

3/4 tsp baking soda

1/4 tsp salt

2 c semi-sweet chocolate chips (can substitute mini m&ms or green mint chips)

1/2 c coarsely chopped nuts (optional)


Heat oven to 350F. In a large mixer bowl, beat butter, sugar, eggs and vanilla until light and fluffy. Stir together flour, cocoa, baking soda and salt; add to butter mixture. Stir in chocolate chips and nuts. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes or until just set. Cool slightly; remove from cookie sheet to wire rack. Cool completely.

Pumpkin Cocolate Chip Cookies

Recipe from Tara of @lovliecakes

1 cup pumpkin puree
1 cup sugar
1/2 cup oil
1 egg
1 tsp vanilla
Mix all together

Add:
2 cup four
2 t. baking powder
1 t. cinnamon
1/2 tsp cloves
1/2 tsp ginger
1/2 tsp salt
1/2 tsp baking soda  dissolved in 1/2 tsp milk

Mix and add:
1 cup chocolate chips

Bake at 350 degrees for 10-12 minutes
Let cool for 10 minutes

Offret Monster Cookies

MIX:
1 pound butter
2 pounds brown sugar
4 cups sugar
12 eggs

ADD:
3 pounds peanut butter
8 teaspoons baking soda
18 cups oatmeal
1 pound chocolate chips
1 pound M&M's
1/2 cup vanilla
2 cups chopped nuts

Use an ice cream scoop to plop dough on pans, then smooth down.  Bake for 10 minutes at 350.
Makes 80 large cookies.


HALF RECIPE

MIX:
1/2 pound butter
1 pound brown sugar
2 cups sugar
6 eggs

ADD:
1 1/2 pounds peanut butter
4 teaspoons baking soda
9 cups oatmeal
1/2 pound chocolate chips
1/2 pound M&M's
1/4 cup vanilla
1 cup chopped nuts

Use an ice cream scoop to plop dough on pans, then smooth down.  Bake for 10 minutes at 350.
Makes 40 large cookies.

Finnish Cookies


A Grandma Bradley classic.

Ingredients:
2 cups flour
1/2 cup sugar
1 cup margarine
1 egg, whipped
pearl sugar

Directions:
Mix the flour, sugar and margarine together. Shape
dough into a roll, about 1 and a half inches in diameter.
Wrap roll in plastic wrap and chill. Cup roll into 1/8th
inch slices. Brush the tops of the cookies with the
whipped egg and sprinkle pearl sugar on top.

Bake at 375 for 8-10 minutes.

Ranger Cookies

1/2 cup butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla
1 1/4 cups flour
1 cup quick rolled oats
1 cup coconut
1 cup raisins, dried cherries, dried cranberries, or mixed dried
fruit bits (we use cranberries)

Directions:
In a large mixing bowl beat butter. Add sugars, baking powder
and baking soda. Beat until combined. Beat in egg and vanilla. Mix
in flour. Mix in oats, coconut and dried fruit.

Bake at 375 for 8 minutes or until edges are golden

Chocolate Chip Butterscotch Peanut Butter Cookies


An oldie I re-discovered in my recipe box last
weekend. I used to make these in our Nebraska
days. This is my favorite dough to eat. The
cookies aren't bad, either! Jill Dorrough

1 c sugar
2/3 c brown sugar
1 c butter
1 c peanut butter
1 tsp vanilla
2 eggs
2 c flour
1 c oats
2 tsp soda
1/2 tsp salt
6 oz chocolate chips
6 oz butterscotch chips

Directions:
Cream butter, peanut butter and sugars together. Add
eggs and vanilla. Add flour, oats, soda and salt. After
it is all mixed together, add the chocolate and
butterscotch chips. Scoop into balls and place on
cookie sheets. Flatten slightly with your palm. Bake
350 for 10-12 minute.

Snickerdoodles

From the old red Bradley cookbook. This really is the best recipe for snickerdoodles.

1/2 c butter
1/2 c Crisco
1 1/2 c sugar
2 eggs
2 3/4 c flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
2 tsp vanilla


Directions:
Cream shortening, butter and sugar together. Add eggs and vanilla. Add sifted dry ingredients. Form into balls (1 oz./2TBSP size). Roll balls in a mixture of 2 TBSP sugar + 2 tsp cinnamon. Place dough balls 2 inches apart on a cookie sheet, and smash slightly with your palm. Bake 8-10 minutes at 400 degrees.

Number Of Servings:24 if using a 2-TBSP sized dough ball

Peanut Butter Oatmeal Cookies

1/2 cup shortening
1/2 cup butter
1 cup packed brown sugar
3/4 cup white sugar
1 cup peanut butter
2 eggs
1 1/2 cups flour
2 teaspoons baking soda
2 teaspoons hot water
1 teaspoon salt
1 cup quick cooking oats

Directions:
Preheat oven to 350. Cream shortening, butter, brown sugar, white sugar and peanut butter. Beat in eggs one at a time. Disolve baking
soda in hot water. Add to peanut butter mixture and add salt. Stir in flour and oats. Drop by spoonfuls on ungreased cookie sheet. Bake for
10-15 minutes, just until edges are light brown. Don't overbake! Very tasty!!!!

Monster Cookies

Big, yummy, chewy cookie. Usually I make 1/2 of this
recipe. Jill Dorrough

1 c butter
2 c sugar
2 1/4 c brown sugar
24 oz. peanut butter
6 eggs
2 tsp vanilla
4 tsp baking soda
8 cups oats
1 1/2 c chocolate chips
1 package of M&Ms

Directions:
Cream together butter, sugars and peanut butter. Add
eggs and vanilla and mix well. Add baking soda and
oats, and then chocolate chips. Mix together. Form
each cookie with a 1/4 c measuring cup. Place 6
dough balls on each cookie sheet, and smash each
one down with your palm. Place 10 M&Ms on each
cookie. Bake at 375 for 10-12 minutes.

Chocolate Oatmeal Chippers

I love these chocolate-chocolate oatmeal cookies.

1 cup butter
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1/2 cup cocoa
1 1/4 cup flour
1/2 tsp salt
1 tsp soda
1 1/2 cups chocolate chips
2 cups oats

Directions:
Mix butter and sugars until smooth. Mix in eggs and
vanilla. Add cocoa, soda, salt, and mix. Add flour a
little at a time while mixing. Add oats and mix. Add
chocolate chips.

Bake at 350 for 10 minutes

Number Of Servings:4 dozen

Celebration Cookie Mix

The ingredients of this are to be layered in a wide-mouth 1-quart canning jar or 1 - quart bag for gift-giving.

1/3 cup chopped walnuts
1 cup mini M&Ms
1/3 cup raisins
3/4 cup brown sugar
3/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp salt

Directions:
Layer the ingredients in the order given into a jar or bag. Pack each layer in place before adding the next ingredient.

Attach a gift tag with the mixing and baking directions.

Mixing and baking directions:
1 jar/bag Celebration bookie Mix
3/4 cup butter or margarine, softened
1 egg
3/4 tsp. vanilla

Preheat the oven to 350 oF. In a large bowl, cream the butter, egg and vanilla. Add the Celebration Cookie Mix. Stir until the mixture is well blended. Shape into 1-inch balls and place about 2 inches apart on greased cookie sheets. Bake for 12-15 minutes. Transfer to wire racks to cool.

Number Of Servings:Makes 3 to 4 dozen.

Cowboy Cookie Mix

This is to be put in a wide 1-quart jar or bag for gift-giving.

1 1/3 c old-fashioned oats
1/2 cup brown sugar
1/2 cup sugar
1/3 cup chopped pecans
3/4 cup semi-sweet chocolate chips
1 1/3 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Directions:
Layer the ingredients in the order given into jar/bag. Pack each layer in place before adding the next ingredient.

Attach a gift tag with the mixing and baking directions.

Mixing and baking directions:
1 jar/bag Cowboy Cookie Mix
1/2 cup butter or margarine, melted
1 egg
1 tsp vanilla

Preheate the oven to 350 oF. In a medium bowl, cream butter, egg, and vanilla. Add the Cowboy Cookie Mix. Stir until the mixture is well blended. You may need to use your hands to finish mixing. Shape dough into walnut sized balls. Place dough balls 2 inches apart on a greased cookie sheet. Bake for 11-13 minutes. Transfer to wire racks to cool.

Number Of Servings:Makes 2 1/2 to 3 dozen

Toffee Malted Cookies

These are so good! This recipe makes a lot so be ready to give them away. I do because if I don't I will eat them all!

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1 package (3.4 oz) instant vanilla pudding mix
1 tsp vanilla extract
2 1/4 cups all purpose flour
1 cup quick cooking oats
1 tsp baking soda
1/2 tsp salt
1 cup malted milk balls, chopped
3/4 cup English toffee bits or almond brickle chips

Directions:
In a large mixing bowl, cream the butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Add pudding mix and vanilla.
Combine the flour, oats, baking soda and salt; add to creamed mixture. Fold in the malted milk balls and the toffee bits (dough will be stiff). Drop by rounded teaspoonfuls 2 in apart onto ungreased baking sheets.
Bake at 350 for 12-15 minutes or until golden brown. Cool for 2 minutes before removing to wire racks

Number Of Servings:6 dozen

Rollo Cookies

These are quite delicious! Lisa Stephenson

2 1/2-2 3/4 cup flour enough so dough is not sticky
3/4 cup cocoa
1 tsp baking soda
1 cup white sugar
1 cup brown sugar
1 cup margarine
2 tsp vanilla
2 eggs
48 rollo chewy carmels

Directions:
Beat sugars and margarine until fluffy, add eggs
and vanilla and beat well. Add flour mixture and
blend well. Cover and cool dough in fridge for
about 1/2 hour.

Shape into1'' ball around caramel, covering it
completely.
Bake 8 minutes at 350*, DO NOT OVER BAKE, they
will look quite soft.
Cool in pan slightly then move to a piece of waxed
paper.
Cool completely you can melt white chocolate and
drizzle over top or eat as is.

Caramel Cookies

1 14 oz bag caramels (at least 50)
2/3 cup canned milk
3/4 cup butter, melted
8 oz bag of chocolate chips
1 package white cake mix
1/2 cup nuts (optional)

Directions:
Preheat oven to 350. Grease and flour a 9x13 inch
cake pan.
Mix together caramels and 1/3 cup canned milk in
top of a double broiler and heat until caramels are
completely melted.
Mix cake mix, butter, and other 1/3 cup of canned
milk. Put half of the mixture in bottom of pan and
bake for 6 minutes. Remove and let stand for a
few minutes.
Pour layer of caramels over baked layer. Sprinkle
with chocolate chips and nuts. Put rest of cake
mixture on top and spread evenly.
Bake 20 minutes. Refrigerate 30 minutes before
cutting.

Pumpkin Chocolate Chip Cookies

This is a quick and easy recipe perfect for the fall that
only takes 3 ingredients! Kristy Dorrough

2 spice cake mixes
1 large can pumpkin (not pumpkin pie filling)
12 oz. bag chocolate chips (approx. 2 cups)

Directions:
Dump dry cake mix in bowl (or mixer). Add pumpkin
and mix until lumps are gone. Stir in chocolate chips.
Spray cookie sheets with Pam. Place on cookie
sheets (keep cookies rather small). Makes about 6
dozen.

Caramel Chocolate Cookies

Chocolate cookies with a caramel suprise in the middle!
I tried these out on the Creers and the Las Vegas
Parrys yesterday at dinner and it was a thumbs up.

1/2 cup butter, softened
1 cup sugar
1 egg
1/3 cup milk
2 squares (1 oz each) unsweetened chocolate,
melted and cooled
1 tsp vanilla extract
2 cups flour
1/2 tsp baking powder
1/2 tsp salt
12 caramels quartered (my caramels were pretty
small so I just cut them in half)

Frosting:
1 1/2 cups confectioners sugar
1 square (1oz) unsweetened chocolate, melted and
cooled
2 T light corn syrup
2-3 T hot water
Chopped pecans, optional


Directions:
In a large mixing bowl, cream the butter and sugar.
Beat in the egg, milk chocolate and vanilla. Combine
the flour, baking powder, and salt; gradually add to
the creamed mixture. Cover and refrigerate
overnight or until easy to handle.
Shape rounded tablespoonfuls of dough around
caramel pieces. Place 2 in. apart on ungreased
baking sheets. Bake at 400 for 6-8 minutes or until
set. Remove to wire racks to cool.
In a mixing bowl, combine the sugar, chocolate,
corn syrup and enough water to achieve desired
consistency. Frost cookies. Sprinkle with pecans
if desired.

Number Of Servings:4 dozen (I wasn't able to make that many, maybe the size of my caramels)

Preparation Time:25 min. + chilling

Crammer Cookies

Super Good Cookies, not a lot of stuff besides
chocolate... but who says that's a bad thing

1 c butter
1 c sugar
1 c brown sugar
2 eggs
1TBS vanilla
3 c flour
1 t. baking soda
1/2 t. salt
1 t. cinnamon
11 oz. of each- semi-sweet choc chips
mini kisses
skor pieces
white choc chips


Directions:
Mix ingredients together. I can do two of the bags of
the chips in the ole' kitchenaid. The last two bags I
hand mix (or have my strong husband mix it).

Bake at 335 degrees for 12 min

Spicy Oatmeal Raisin Cookies

1/2 c butter
1/2 c butter-flavored crisco
1 c packed brown sugar
1/2 c white sugar
2 eggs
1 tsp vanilla
1 1/2 c flour (use 2 cups at high elevation)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp salt
3 c rolled oats
2 cups raisins

Directions:
Preheat oven to 350 degrees. In a KitchenAid mixer fitted with paddle attachment, cream together butter, shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Add the oats and raisins. Drop by rounded 2-TBSP balls onto ungreased cookie sheets. Bake 10-12 minutes until light and golden. Do not overbake. Let cool for 2 minutes and remove to wire rack to cool completely.

Family Fun Best-Ever Cowboy Cookies

2 cups oats
2 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/8 tsp cinnamon
1 cup butter, softened
1 cup brown sugar
2/3 cup sugar
2 eggs, at room temperature
1 tsp vanilla extract
2 cups chocolate chips

Directions:
In a large bowl, stir together the oats, flour, baking
soda, baking powder, salt & cinnamon.
In a separarte bowl, blend the butter and sugars
until smooth, about 2 minutes. Add the eggs and
continue to beat until fluffy about 1 1/2 minutes.
Blend in the vanillla extract.
Stir the dry mixture into the butter mixture. Mix in
chocolate chips. Refrigerate the dough for 1 to 2
hours.
Heat the oven to 350 degrees.
Shape the dough into balls about a scant 1/4 cup.
Flatten the balls. Bake for 13 to 14 minutes.
