Caramel Chocolate Cookies

Chocolate cookies with a caramel suprise in the middle!
I tried these out on the Creers and the Las Vegas
Parrys yesterday at dinner and it was a thumbs up.

1/2 cup butter, softened
1 cup sugar
1 egg
1/3 cup milk
2 squares (1 oz each) unsweetened chocolate,
melted and cooled
1 tsp vanilla extract
2 cups flour
1/2 tsp baking powder
1/2 tsp salt
12 caramels quartered (my caramels were pretty
small so I just cut them in half)

Frosting:
1 1/2 cups confectioners sugar
1 square (1oz) unsweetened chocolate, melted and
cooled
2 T light corn syrup
2-3 T hot water
Chopped pecans, optional


Directions:
In a large mixing bowl, cream the butter and sugar.
Beat in the egg, milk chocolate and vanilla. Combine
the flour, baking powder, and salt; gradually add to
the creamed mixture. Cover and refrigerate
overnight or until easy to handle.
Shape rounded tablespoonfuls of dough around
caramel pieces. Place 2 in. apart on ungreased
baking sheets. Bake at 400 for 6-8 minutes or until
set. Remove to wire racks to cool.
In a mixing bowl, combine the sugar, chocolate,
corn syrup and enough water to achieve desired
consistency. Frost cookies. Sprinkle with pecans
if desired.

Number Of Servings:4 dozen (I wasn't able to make that many, maybe the size of my caramels)

Preparation Time:25 min. + chilling
