It's a pizza roll-up! The dough recipe is meant to provide enough dough for 3 meals, it can easily be frozen and used later for more stromboli (if your family likes it...) or it works great for homemade pizza. It is also pretty easy to make 1/3 of a recipe of dough if you prefer that. Stolen from the Deseret News
Dough: 3 tablespoons yeast 3 cups hot water (95-100 degrees) 3 tablespoons oil 9 cups flour 3 teaspoons salt 1 1/2 tablespoons oregano 1 tablespoon garlic salt Stromboli: Makes 2 loaves 1 1-pound loaf frozen bread or pizza dough, thawed 2 egg yolks (reserve egg whites for later) 1 tablespoon grated Parmesan cheese (or 6 Cheese blend) 1 tablespoon olive oil 1/2 tablespoon oregano 16 ounces sliced pepperoni 4 cups (8 ounces) shredded mozzarella cheese Optional toppings: 4-ounce can mushrooms, 1 green pepper diced, 3 ounces olives, Italian sausage, bacon bits, browned Italian sausage, pineapple tidbits. Sesame seeds Directions: Dough: In a Bosch bread mixer, or large bowl, mix yeast, water and oil. Wait 5 minutes for the yeast to activate (turn frothy on top). In a large bowl, mix flour, salt, oregano and garlic salt. Stir the wet and dry ingredients together and add small amounts of water if dough feels dry. Mix or knead for 8-10 minutes. Dough should be elastic. You can to freeze dough at this point. Just break into 3 pieces and place in a larger freezer ziptop bag. Label ''Pizza dough'' and freeze for up to 6 months. To use, defrost in the microwave on high 20 seconds. Then roll out for pizza, stromboli or calzones. Yields 3 pizzas or 2 strombolis. Stromboli: On greased counter, roll out dough into a 15-by-10 inch rectangle. Place the rectangle on a foil-lined cookie sheet. In a bowl, combine egg yolks, Parmesan cheese, oil and oregano. Brush over the dough. Sprinkle with pepperoni, mozzarella cheese, mushrooms, pepper, olives and other toppings. Roll up, jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under. Place seam side down; with a knife make slits every 2 inches along the top of the dough. Brush the top with egg whites and sprinkle with sesame seeds. Bake each individually at 350 degrees for 25-30 minutes or until golden brown. Serve with warmed Pizza Sauce. Optional: Wrap and freeze 1 loaf with plastic wrap (label ''350 degrees, 35 minutes''). To serve frozen loaf: Bake frozen loaf at 350 degrees for 35 minutes. Serve warm with Pizza Sauce (Sauce can be frozen and placed next to the pizza loaf). Number Of Servings: 3-4 per Stromboli |
