Belizean Rice and Beans


To celebrate the Bradley's adventure to Lamanai, I
am posting this recipe. My kids love this dish, and
when we are in Belize, they order it at every
restaurant! -Jill Dorrough

1/2 cup onion, diced
2 cloves garlic, minced
1 cup stewed beans
1 tsp salt
1/2 tsp freshly ground black pepper
1/4 tsp thyme
2 cups white rice
1 cup coconut milk, unsweetened
1 cup water

Saute onions and garlic in a sauce pot. Add stewed
beans along with its liquid. Season with salt, pepper
and thyme. Stir in the rice, coconut milk and water.
Cover and cook over medium heat for
approximately 15 minutes or until water is
absorbed. Reduce heat to medium low. Sprinkle
with 1/4 cup of water, cover and continue cooking
for approximately 10 minutes or until rice is tender
and water absorbed. You can used canned stewed
beans
