Frog Eye Salad

Ingredients:
1 cup white sugar
2 tablespoons all-purpose flour
2 1/2 teaspoons salt
1 3/4 cups unsweetened pineapple juice
2 eggs, beaten (Yes, really do this step)
1 tablespoon lemon juice
3 quarts water
1 tablespoon vegetable oil
1 (16 ounce) package acini di pepe pasta
3 (11 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, drained
1 (8 ounce) container frozen whipped topping, 
thawed
1 cup miniature marshmallows (I use WAY more 
than this)
1 cup shredded coconut (And I always leave out 
this)

Directions:
In a sauce pan, combine sugar, flour, 1/2 teaspoon 
salt, pineapple juice and eggs. Stir and cook over 
medium heat until thickened. Remove from heat; 
add lemon juice and cool to room temperature.

Bring water to a boil, add oil, remaining salt and 
cook pasta until al dente. Rinse under cold water 
and drain.

In a large bowl, combine the pasta, egg mixture, 
mandarin oranges, pineapple and whipped topping. 
Mix well and refrigerate overnight or until chilled. 
Before serving add marshmallows and coconut. 
Toss and serve.

Cookie Salad


This is the salad that was at Alex's shower    Chesney Kjar

2 small pkg instant vanilla pudding
1 cup buttermilk
16 oz Cool whip softened
2 large cans crushed pineapple drained
2-3 small cans mandarin oranges drained
vanilla creme cookies

Directions:
Beat the vanilla, buttermilk, and cool whip together then add fruit. 1/2 hour before serving add 3/4 package of vanilla creme cookies crushed

Waldorf Salad

1 1/2 c. mayonnaise
3 T. white sugar
1 T. lemon juice
1/4 t. salt
9 apples, cored and chopped
3 c. thinly sliced celery
2 c. + 3 T. chopped walnuts

Directions:
In a medium bowl, whisk together the mayonnaise, sugar, lemon juice and salt. Stir in the apples, celery, and walnuts. Chill until ready to serve.

Cookie Salad

1 small package of vanilla instant pudding
1 small container of Cool Whip
1 cup milk
1-2 bananas
Handful of strawberries, chopped
Crumbled Mother's Striped Shortbread cookies



Directions:
Mix first 3 ingredients in a bowl until smooth. Cover
and
refrigerate until ready to eat. Then mix in the rest.

Frog Eye Salad

A Breinholt staple that I have incorporated into Dorrough get-togethers

1 cup sugar
2 TBSP flour
1/2 tsp salt
1 3/4 c pineapple juice (drained from cans)
2 eggs, beaten
1 TBSP lemon juice
1 pound box of acini de pepe pasta
3 cans mandarin oranges
2 cans pineapple tidbits or chunks
1 9-oz carton of Cool Whip, thawed
1/2 package miniature marshmallows
1 cup flaked coconut (I never add this)

Directions:
Cook acini de pepe in boiling water for 9 minutes. Drain. While pasta is cooking, make the sauce:
Combine sugar, flour and salt in a medium saucepan. Stir in pineapple juice and eggs. Cook, stirring constantly until thickened. Add lemon juice and remove from heat. Cool to room temperature Combine egg mixture and acini de pepe and refrigerate overnight in an airtight container (don't skip this part!) Add fruit, marshmallows and cool whip and mix thoroughly. Refrigerate in airtight container until thoroughly chilled.

Winter Fruit Salad with poppy seed dressing

You can also add grilled chicken to the salad

Dressing:
1/2 c. sugar
2 t. finely chopped onion ( i just use dried onions)
1/2 t. salt
1/3 c. lemon juice
1 t. dijion mustard (I also use dried mustard)
1/3 c. oil
1 T. poppy seed

1 head of romaine lettuce
4 oz. (1cup) shredded swiss cheese
1 cubed pear
1 cubed apple
1 c. cashews
1/4 c. dried cranberries


Directions:
Dressing: Blend first 5 ingredients in a blender or food processor until well blended. With blender still running, slowly add oil and blend until smooth. Add poppy seeds and blend for a few more seconds. Chill for a minimum of 1 hour.

(Because I am lazy I add all ingredients to a jar and shake until blended)

Mix all ingredients together in a bowl and add the dressing and cashews right before serving.
The dressing makes a lot so you might not want to use it all

Strawberry Coleslaw

Easy great salad Barb Creer

1 bag coleslaw
4-5 green onions, chopped
1 1/2 cup strawberries, sliced

Mix and leave

Directions:
Dressing:
1 cup light mayo
2/3 cup sugar
1/3 cup white vinegar
2 T. poppy seeds
whisk and chill, add just before serving.

Apple Pomegranate Salad

4-5 Granny Smith apples
2 pomegranates
1 pint of whip cream
1/4 cup sugar
1/2 tsp vanilla

Dice the apples into bite sized pieces and place in a salad bowl. Add pomegranate arils. Whip the cream and add the sugar and vanilla. Fold the cream into the fruit and serve immediately.
