1/2 cup butter 1/2 cup granulated sugar 1/2 cup packed brown sugar 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1 egg 1 teaspoon vanilla 1 1/4 cups flour 1 cup quick rolled oats 1 cup coconut 1 cup raisins, dried cherries, dried cranberries, or mixed dried fruit bits (we use cranberries) Directions: In a large mixing bowl beat butter. Add sugars, baking powder and baking soda. Beat until combined. Beat in egg and vanilla. Mix in flour. Mix in oats, coconut and dried fruit. Bake at 375 for 8 minutes or until edges are golden |
