Zucchini Brownies

You can't taste the zucchini! Sarajane Luper

2 c. sugar
1 c. oil
1 tsp. Salt
1 tsp baking soda
1/4 tsp baking powder
2 1/2 c. flour
3 eggs
1 tsp. Vanilla
1/2 c. milk
2 c. grated zucchini
1/4 c. cocoa

(Can add coconuts or nuts)

Frosting:
1 cube butter
1 TB. Cocoa
6 TB canned evap. Milk

Mix in saucepan; boil; remove from heat and add 1 1/2 tsp vanilla and 1 lb. Powdered sugar. Stir and cover.

Directions:
Pour brownie batter onto a full cookie sheet.
Bake at 350 for 20 minutes.

Allow brownies to cool and frost.

I often make the frosting with regular milk. I just add it after its off the heat. I think it takes more powdered sugar. You know the drill, just add until its thick enough. I like the frosting a little thick.I think its good with 1/2 cube of butter as well.
