3/4 margarine (I use butter) 2 cups sugar 1 can (16 oz) pumpkin 4 eggs 2 cups flour 2 tsp baking powder 1 tsp cinnamon 1/2 tsp soda 1/2 tsp salt 1/4 tsp nutmeg Directions: Preheat oven to 350. Cream margarine and sugar until light and fluffy. Blend in pumpkin and eggs. Add combined dry ingredients. Mix well. Spread into greased and floured rimmed cookie sheet. Bake 30 minutes or until toothpick comes out clean. Cool. Ice. Frosting: 1 package cream cheese, softened 3/4 margine (once again I use butter) 1 tsp vanilla 3 cups powdered sugar evaporated milk or cream Combine cheese, margarine, vanilla, mixing until well blended. Add sugar gradually, mixing well after each. Slowly add enough milk to make spreading consistency. (I usually have extra frosting but like to save it for when I make cinnamon rolls) |
