BYU Brownies

I used to call these plain old ''mint brownies'' but everyone would call them BYU Brownies. Brownie with a layer of green mint and chocolate frosting Jill Dorrough

2 Betty Crocker brownie mixes (9x13 size) and eggs, water and oil as box instructions call for
1 12-oz bag of green mint chips
For frosting:
1 pound powdered sugar
1/2 c cocoa powder
1/4 tsp salt
1/3 c boiling water
1/3 c softened butter
1 tsp vanilla

Directions:
Mix two brownie mixes according to package instructions. Pour into a jelly roll cookie sheet and bake at 350 for about 25 minutes.

When finished baking, immediately sprinkle one package of green mint chips over the hot brownies and allow the chips to melt for a few minutes. Smooth out the chips to cover the brownies. Cool until green layer hardens.

Make the frosting by mixing all ingredients in a mixer bowl. Spread immediately over brownies. Cool.
