Baked Caramel Corn


My mom's yummy recipe

7 c popped popcorn
1 c butter
2 c brown sugar
1/2 c light corn syrup
1 tsp salt
1/2 t baking soda
8 oz cashews (if you're into that sort of thing)

Directions:
Pop corn, set aside in large metal bowl that can go into the oven. Combine butter, brown sugar, corn syrup, salt in a 2 qt saucepan. Stir and bring to a boil until sugar dissolves. Boil to ''firm ball'' stage (248 degrees) and remove from heat. Stir in baking soda (mixture will foam). Pour mixture over corn and cashews. Mix well. Put into 250 degree oven for 30 minutes. Stir every 10 minutes. Remove and spread out on waxed paper to cool.
