White Bread


This recipe is delicious! My mom also uses it to make bread
bowls, circle loaves, etc.         Melissa Chandler

4 loaves:
10 1/2 c. white unbleached flour
1/2 c. sugar
1 T. salt
3 rounded T. instant yeast
3 T. liquid lecithin (or 1/2 c. oil)
4 cups hot tap water

2 loaves:
5 c. flour
1/3 c. gluten
1 1/2 t. salt
4 T. sugar
4 t. instant yeast
1/4 c. oil
2 c. hot water

Directions:
Mix dry ingredients. Add lecithin (or oil) and water. Mix for 1
minute and check consistency. If dough is too dry, add more
water. If dough is too moist, add more flour. Mix for 5 minutes. 
(Do not add water or flour to the dough after it has finished
mixing). Spray counter and pans with Pam. Shape loaves and
cover with a dish towel. Let raise 25 minutes. Bake at 350 for 25
minutes.
