I love this recipe of Grandma Bradleys in the red cookbook!
2 cups flour 2 cups whole wheat flour 4 t. baking soda 1/2 t. cloves 1 c. shredded carrots 1 c. raisins (optional) 1 1/2 c. oil 4 t. vanilla 2 c. sugar 4 t. cinnamon 1 t. salt 4 c. (5 medium) shredded peeled apples 1 c. coconut 1 c. chopped walnuts or pecans (optional) 1/2 c. milk 3 eggs beaten Directions: Heat oven to 350. Line with paper baking cups or grease 36 muffin cups. Lightly spoon flour into measuring cup; level off. In a 4 quart bowl, combine flour, whole wheat flour, sugar, baking soda, cinnamon, salt & cloves. Add apples, carrots, coconut, raisins and walnuts. Mix well. Add oil, milk, vanilla and eggs. Stir just until moistened. Fill muffin cups 3/4 full. Bake at 350 for 20-25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pans. |
