A change for leftover mashed potatoes

2 cups mashed potatoes 1/2 cup sour cream 4 tablespoons butter, melted 1 tablespoon minced onion 1 tablespoon parsley 1 1/2 cups bread crumbs 1/4 cup Parmesan cheese 1/2 teaspoon paprika Directions: Combine potatoes, sour cream and 2 tablespoons butter. Mix well. Stir in onion and parsley. Form into 6 logs. Combine remaining butter, bread crumbs, cheese and paprika. Coat logs with mixture. Place in greased baking dish and bake at 400 degrees uncovered for 25 to 30 minutes or until golden brown. |
