Ham and Cheese Crepes


A classic Grandma Bradley Recipe

1 cup sour cream
6 green onions, finely chopped
1/2 teaspoon dijon mustard
1/2 teaspoon salt
dash pepper
3 cups grated mild cheese
12 oz. thinly sliced ham-1 slice per person

1/2 cup fine dry bread crumbs
6 tablespoons butter

Crepes--
4 eggs beaten
1 1/3 cups milk
1 1/2 cups flour
1/2 teaspoon salt
2 teaspoons butter--to cook in

Directions:
Mix crepe batter until smooth, refrigerate 2 hours, cook in traditional
pan or on crepe pan and set aside. 

Filling--Mix first five ingredients--spread 1 tablespoon of filling on each
crepe, top with piece of ham and cheese and roll up crepe. Top with
buttered crumbs. Bake at 350 for 10 minutes.


Number Of Servings:12 crepes
