Winter Fruit Salad with poppy seed dressing

You can also add grilled chicken to the salad

Dressing:
1/2 c. sugar
2 t. finely chopped onion ( i just use dried onions)
1/2 t. salt
1/3 c. lemon juice
1 t. dijion mustard (I also use dried mustard)
1/3 c. oil
1 T. poppy seed

1 head of romaine lettuce
4 oz. (1cup) shredded swiss cheese
1 cubed pear
1 cubed apple
1 c. cashews
1/4 c. dried cranberries


Directions:
Dressing: Blend first 5 ingredients in a blender or food processor until well blended. With blender still running, slowly add oil and blend until smooth. Add poppy seeds and blend for a few more seconds. Chill for a minimum of 1 hour.

(Because I am lazy I add all ingredients to a jar and shake until blended)

Mix all ingredients together in a bowl and add the dressing and cashews right before serving.
The dressing makes a lot so you might not want to use it all
