8- 1/2 inch ham slices from deli (honey or smoked) 4 slices of swiss cheese cut in half 1 small onion 1 medium carrot, peeled and shredded 2 stalks of celery chopped 1 green apple, peeled and chopped in 1/2 inch cubes 1 6 oz. pkg of Stove Top Stuffing (chicken) Sauce: 1 tbsp cornstarch 2 tbsps brown sugar 1 cup pineapple juice 1 tbsp butter 1/2 cup apricot preserves or jam Directions: Heat 1 tbsp of oil in fry pan on medium high heat. Add onions and stir constantly until they look translucent, add celery and cook until tender, add carrot and apple. Cook and stir for 1 minute. Remove from heat. Cook stuffing mix according to package directions. At same time you add the dry stuffing mixture, add the onion, celery, carrot, apple mixture. Cover and let stand 5 minutes. Lay out the 8 ham slices and add the 1/2 slice swiss cheese in the middle of each. Add 1/4 cup or so fo the stuffing down the middle of the slice and roll up and toothpick to secure it. Cook ham rolls at 350 degrees uncovered for 15-20 minutes and remove with cheese begins to melt. Sauce: Mix sugar and cornstarch together in small sauce pan and add pineapple juice. Cook over medium heat until it begins to boil and thicken. Add butter and apricot. Mix well and remove from heat. Top each ham roll with sauce. Number Of Servings:4 ish |
