20 oz sourdough starter (about 2.5 cups)
12 oz warm water (about 1 cup)
4 Tb oil
2 tsp salt
6.5 cups flour (hold back about .5 cups to see if the dough needs it.)
In a Bosch mixer:
Combine all ingredients, adding the flour gradually. Mix on level one and then switch to level two after a few minutes. Mix for 10-15 minutes. Flour, or oil, your hands and pull dough out of mixer. Pinch the bread in half and form one loaf at a time in your lands and then place in 9x5 bread pan. Let rise for 3-4 hours, depending on temperature. Heat oven to 350 degrees and bake for 45 minutes. Dump loafs out and let them cool on a rack. For easier cutting, let bread cool, bag it up and slice it the following day.
