Ginger Molasses Cookies (Jill Dorrough)

½ cup unsalted butter  (1 stick)

1 cup sugar

¼ cup molasses

1 egg

2 cups all-purpose flour

2 tsp baking soda

Pinch salt

½ tsp ground cinnamon

½  tsp ground cloves

2 ½ tsp ground ginger


Preheat oven to 300 degrees.  Line 2 baking sheets with parchment paper.

Cream butter with 1 cup of sugar.  Add the molasses and egg and beat well. 

Add the flour, baking soda, salt, cinnamon, cloves and ginger, stir to combine

Use a ¼ cup measuring scoop, shape dough into 12 balls.  Roll in raw sugar or other large sugar crystals.

Bake one sheet at a time (6) for 20 minutes or until cookies are beginning to turn brown.

Cookies should look slightly underbaked.  Move to a wire rack to cool.
